Beautiful and complex. Unusually I felt compelled to read it in two different ways. On the one hand it could mean "you can only find me when the tide goes out" as in the tide has to go out for you to find me because the real me is deeply hidden or its difficult to find the real me.
On the other hand "when the tide goes out there will only be me left" meaning that the character is searching so hard for the right person but when the tide goes out or the chips are down there will only be me left waiting for you.

Wow even though this is only three lines my mind automatically went all over the place with this. I will just talk about what i first thought it is about.
After reading the poem and the title, i feel like this poem could be a metaphor for depression. Like the title sunk could be about yiu falling lower and lower until you have drowned in it. When people are depressed, they never show you the "real" you and don't really want to be found because they hate showing their depression. You will only find me after this passes is what i think the last two lines could mean.
This is a well worded metaphor (if it is) and as i said the title works well so start or even sum up the poem. To me it works both ways. Well done.
